San Juan’s typical food

Definition

Along the process, we saw the importance of both, ancestry and culture, through gastronomy. Chocó’s typical food tell stories, and they are prepared following a tradition and a cultural baggage. This is why we want you to get to know the exact building process of the delicious typical food from Chocó.
 

Three mear sanchocho


Ingredients

Fresh meat, smoked meat and chicken
Vegetables (tomato, purple onion, scallion, string beans, carrots)
Tubers (potato, cassava)
Cheese
Garlic
Maggi
Herbs (coriander, poleo)
Cheese (costeño)
Salt

Preparation

After chopping the vegetables, we fry them in a pot and we add garlic and maggi according to the number of plates we will serve. Once it begins to boil, add the meat and the chicken so that they began to cook as well. After 5 minutes, add the cassava, the banana and the potatoes. Give it some time and mix constantly in order for it to thicken. Once it’s done, add the cheese, the herbs and cover the pot for a while. Taste the flavor and let it rest for a while before serving.
 

Cheese Soup


Ingredients

Pasta
Vegetables (tomato, purple onion, scallion, string beans, carrots)
Tubers (potato, cassava)
Cheese
Garlic
Maggi
Salt

Preparation

After chopping the vegetables, we fry them in a pot and let them cook in their own water. Then we put some garlic and Maggi, once the vegetables are well fried, we add more watter depending on the number of plates we’re serving. Once the water begins to boil, we add the pasta. Once it’s done, we add the potatoes and the cassava, a bit of salt (because the cheese might be already salty). When we have everything in the pot, we add the cheese and we taste if it has enough salt. In order to give some countryside flavor, we add coriander and some poleo before we finish.
 

Arroz Atollado


Ingredients

Rice
Vegetables (tomato, purple onion, scallion, string beans, carrots)
Tubers (potato, cassava)
Cheese
Garlic
Maggi
Salt
Meat

Preparation

After chopping all the vegetables, fry them until they cook well. Add the garlic and Maggi cube in order to have a nice taste. Then, add the water to a pot, and when it boils, add the rice according to the number of plates served. Add the chosen meat, and when both, rice and meat, cook properly, add the cheese to have a delicious flavor.
 

Tapado de Chere


Ingredients

Salted fish
Bananas/plantains
Salt
Herbs

Preparation

Since we’re using salted fish, we must leave it in water overnight in order to clean the salt. Then cook the bananas or the platains with very few salt. When it’s almost cooked, place your fish on top of it, taste the salt and add more if needed. You can also add coriander and some poleo before it’s done.
 

Rice Cakes


Ingredients

Rice
Vegetables (tomato, purple onion, scallion, string beans, carrots)
Tubers (potato, cassava)
Cheese
Garlic
Maggi
Salt
Cumin
Black sauce
Chimichurri
Mustard
Meat or chicken

Preparation

Chop the vegetables and fry them in a pan (do not add water), then, add the black sauce, chimichurri and the mustard. Add some maggi cube and garlic according to the number of cakes you’re doing. Then, add some cumin. On the other side, we must have the raw rice mixed with some carrots. Once the ingredients are mixed up, join the rice with the vegetables until we have a compact mix. The meat or chicken must be well seasoned.

Once it’s all ready, begin wrapping with the leaf that’s cut down in our mounts. Let it cook for at least 1 hour and 20 minutes.
